Listen lady,
if you want this tattoo so bad, why NOT do all the research and sorting yourself? Isn't that more satisfying than relying on somebody else, especially for such an important, permanent decision? Why ask a bunch of strangers on the internet for help? You obviously live in an area with plenty of good artists, so go find the one you like best and get a good tattoo.
Also in general nobody on here gives a fuck about the meaning of your tattoo, whether it's super personal or superficial, because the bottom line is whether it looks good.

Black and grey with just one color isn't too uncommon, depending on which style of black and grey... and especially if red is that one color.
I think you're in a pretty good location to find a great artist, you just need to be more specific in the style you're looking for. A good artist will be able to make a rose look harsher and thornier if you want, even if you don't see one like that in their portfolio...
Can you describe better the style you're looking for? Thick outlines, thin outlines, no outlines? Heavy black shading or soft subtle gradients? Heavily stylized or more realistic?

Just cause problem #2 is more messed up than problem #1, does not mean that problem #1 is not messed up...
